This is a traditional main dish from Ecuadorian Coast, made from green banana, peanuts and fish. It has aphrodisiac and nutritious properties. It can be served with rice, a squeeze of lemon and hot sauce or chili. Delicious... Ingredients:
10 green bananas.Pre-seasoned fish minced to cubes or fillets,
1 pound of ground peanut, achiote, salt and pepper to taste.
SEASONING: 1 medium red onion, 1 large bell pepper, 2 sprigs of cilantro, 1 white onion, 5 cloves of garlic, 3 tablespoons cumin. (All finely chopped).
Preparation:
Finely grate the 10 green bananas. Separately in a pan or wok, saute with annatto all dressing ingredients. Mix the seasoning with grated green bananas. Knead well until well blended. Add pound of ground peanut, salt and pepper to taste. Add about 4 cups of water until the dough is homogeneous and then the pre-seasoned fish. Place this mixture in a clay pot or large pan previously greased and bring to medium heat. Calculate 45 minutes to 1 hour of cooking. Stir constantly. Finally sprinkle chopped cilantro.
